Annatto is a natural, flavourless, non-toxic colourant that is added to the milk when making orange or marble cheddar. Annatto is made from the waxy layer that covers the seeds of the Achiote shrub, Bixa orellana. The Achiote is native to Central America and Northern South America but is now grown in tropical regions around the world.
