Learn how to make Traditional Cheddar and fresh squeaky cheese curds with the Modern Milkmaid™ during this online cheesemaking class!


This is an intermediate/advanced class due to the length of time it takes to make (7-8 hours), and the cheddaring technique, which is relatively complex. However, a brand-new cheesemaker can successfully make Cheddar as their first cheese, as Naomi guides you through the entire process step-by-step and answers all your questions along the way.

While this class runs between 7-8 hours, you will not be hovering over your pot the entire time, as there are several long gaps in the cheesemaking process where you can do other things. Keep in mind that you will need to adjust the weight of your press about an hour after the class ends, so you will be finishing around 6:00 pm Pacific/9:00 pm Eastern.


Cheesemaking kits are optional; the basic kit includes all the specialty ingredients and equipment you'll need (except milk and salt) to make up to 8 batches of Cheddar cheese or fresh squeaky cheese curds. The standard kit also includes a mould for pressing your Cheddar, and you can choose between a small or medium food-grade polypropylene mould and a follower. The small mould is the perfect size for making cheese using 4-8 litres/quarts of milk, while the medium mould is for 8-12 litres/quarts of milk.

WHAT IS INCLUDED IN THE CHEDDAR KIT?
The basic cheesemaking kit includes all the ingredients you'll need (except milk and salt) to make up to eight batches of Cheddar cheese: calcium chloride, mesophilic culture, annatto, rennet, a sheet of synthetic cheesecloth,  a cheese mat, cream wax, and a copy of the recipe handout.

​The standard kit also includes a mould for pressing your cheese. The small mould is the perfect size for making wheels using 4-8 litres/quarts of milk, while the medium mould is best for 8-12 litres/quarts.
DO I NEED TO PURCHASE A CHEESMAKING KIT?​
If you do not purchase a kit, you'll receive an email about a month before the class date with a checklist of everything that you'll need.
What's the difference between the Basic and standard kits?
The standard kit is identical to the basic kit, but also includes a cheese mould and follower.
How long will the cheese mould last?
​This is the same mould that commercial cheese plants use, and is made from thick, food-grade polypropylene. With proper care, it should last you a lifetime, and can be used to make wheels of Gouda, Cheddar, or any type of hard or semi-hard, pressed cheese. 

The moulds are stacking, if you purchase additional moulds, you can stack them during pressing.
Is a cheese press included with the kit?
