This is an intermediate/advanced class due to the length of time it takes to make (7-8 hours), and the cheddaring technique, which is relatively complex. However, a brand-new cheesemaker can successfully make Cheddar as their first cheese, as Naomi guides you through the entire process step-by-step and answers all your questions along the way.

While this class runs between 7-8 hours, you will not be hovering over your pot the entire time, as there are several long gaps in the cheesemaking process where you can do other things. Keep in mind that you will need to adjust the weight of your press about an hour after the class ends, so you will be finishing around 6:00 pm Pacific/9:00 pm Eastern.
Cheesemaking kits are optional; the basic kit includes all the specialty ingredients and equipment you'll need (except milk and salt) to make up to 8 batches of Cheddar cheese or fresh squeaky cheese curds. The standard kit also includes a mould for pressing your Cheddar, and you can choose between a small or medium food-grade polypropylene mould and follower. The small mould is the perfect size for making cheese using 4-8 litres/quarts of milk, while the medium mould is for 8-12 litres/quarts of milk.
