Learn to make Gouda cheese with the Modern Milkmaid™ from the comfort of your home! In this cheesemaking class, Naomi De Ruiter will teach you how to make a traditional Gouda, from culturing the milk and cutting the curd to pressing your cheese and options for ageing.
The optional cheesemaking kits include all the ingredients you need (except milk and salt) to make up to eight 4-litre batches of Gouda cheese. The kit with the mould includes a sturdy, food-grade polypropylene mould and follower that will last you for years. The kits will ship out in early March.
Naomi will teach this online cheesemaking class via Zoom on Saturday, April 10th, from 10:00 am—2:00 pm Pacific Daylight Time (1:00—5:00 pm Eastern Daylight Time).
Do I need to purchase a cheesemaking kit?
The cheesemaking kit includes all the ingredients you'll need (except milk and salt) to make up to eight 4-liter batches of Gouda cheese, but you're welcome to source your ingredients locally if you prefer. Several weeks before the class date, you'll receive an email with a checklist of all the equipment and ingredients that you'll require for the class.
What is included in the kit?
The Gouda kit includes calcium chloride, bacterial culture, rennet, synthetic cheesecloth, and cream wax, as well as a copy of the recipe handout. The kit with the mould also includes a small round cheese mould that is the perfect size for making 4-liter batches of cheese.
How long will the cheese mould last?
This is the same mould that commercial cheese plants use, and is made from thick, food-grade polypropylene. With proper care, it should last you a lifetime, and it can be used for making wheels of Gouda, Cheddar, or any type of hard or semi-hard, pressed cheese.
Is a cheese press included with the kit?
A cheese press is not included, but before the class you will be provided with instructions for making an improvised cheese press at home.

Free shipping is included to addresses with Canada and the United States. If you live outside of these countries, please contact Naomi at cheesemaker@naomisbirdsongfarm.ca for a shipping quote.
