Learn to make Gouda cheese with the Modern Milkmaid™ from the comfort of your home! In this online cheesemaking class, Naomi De Ruiter will teach you how to make a traditional Gouda, from culturing the milk and cutting the curd to pressing your cheese and options for ageing.

Cheesemaking kits are optional; the basic kit includes all the specialty ingredients and equipment you'll need (except milk and salt) to make up to 8 batches of Gouda cheese. The standard kit also includes a mould for pressing your Gouda, and you can choose between a small or medium food-grade polypropylene mould and follower. The small mould is the perfect size for making cheese using 4 litres/quarts of milk, while the medium mould is for 8 litres/quarts of milk.

What is included in the Gouda kit?
The cheesemaking kit includes all the ingredients you'll need (except milk and salt) to make up to eight 4-litre/quart batches of Gouda cheese: calcium chloride, mesophilic culture, vegetarian rennet, synthetic cheesecloth, a small round cheese mould, a cheese mat, cream wax, and a printed copy of the recipe handout.

What if I don't purchase a kit?
​If you do not purchase a kit, you'll receive an email about a month before the class date with a checklist of everything that you'll need.
How long will the cheese mould last?
​This is the same mould that commercial cheese plants use, and is made from thick, food-grade polypropylene. With proper care, it should last you a lifetime, and can be used to make wheels of Gouda, Cheddar, or any type of hard or semi-hard, pressed cheese. 

The moulds are stacking, if you purchase additional moulds, you can stack them during pressing.
Is a cheese press included with the kit?

Where can you ship the cheesemaking kits to?
Shipping is available to addresses within Canada and the United States. If you live outside of these countries, please contact Naomi at cheesemaker@naomisbirdsongfarm.ca for a shipping quote.
What is the class size?
I run classes with a minimum of 6 and a maximum of 14 students.
